Our
Story
Steve and Shelby Schoenborn met over 22 years ago (married for 20): Steve was serving in the US Army and Shelby was a staff Archaeologist for the Army. It was love at first sight, of bread that is...Steve was born and raised in Germany, his palate is firmly rooted in German breadmaking traditions. Whilst stationed in Germany, Shelby was able to apprentice with some of the best bakers in Bavaria, learning age old European bread making techniques that she brought back to the USA. After Steve retired from the Army, they sought to develop a business doing the things they loved: bread.
Steve and Shelby have a daughter, an avid rower and artist in the 9th grade, and 3 somewhat feral dogs. They travel as much as they can in their spare time and work in healthcare.

Q: What is a Cottage Bakery?
A: A small home-based business in the state of Florida. We are governed by FSHN20-55/FS425: Cottage Food in Florida.
Q: Can you do wholesale orders?
A: No, cottage bakeries are not permitted to sell wholesale.
Q: Can you ship?
A: We can, but shipping has gone up substantially and we will need to discuss that with you prior to placing an order.
Q: Do you sell starter?
A: Not at this time.
Q: Do you teach sourdough baking?
A: Not at this time, we may consider this shortly!
Q: What if my order didn't turn out as expected?
A: Sourdough can be finnicky and at times, a loaf can look perfect outside and have a bit of gumminess inside. If that happens, reach out to us immediately and we will rectify this. We stand behind our product and take immense pride in what we do.
Q: Is sourdough gluten free?
A: No. However, it is gluten friendly! We recommend you review this article at Bon Appetit and this article on WebMD.
Q: What is in your sourdough?
A: Our bread contains flour, filtered water, the bacteria Fructilactobacillus sanfranciscensis (our starter) and french sea salt. If you order a loaf with inclusions, obviously it contains those too ;)
Q: How do I order a specialty item?
A: We can do MOST baked goods using sourdough...Brownies, Scones, Dinner Rolls, Sandwich Bread, Muffins. Please email us questions at Sassypantssourdough@gmail.com to discuss.
Q: How do I store my bread?
A: We recommend you store bread on the counter at room temperature. What we do is slice it up and freeze it sliced, since our loaves are huge (a little over 2 lbs), we don't often finish a loaf before it starts to turn. Freezing it sliced allows you to enjoy the bread for longer--just pull pieces out and defrost in the toaster or on the counter.
Q: Why do the different flavors look different?
A: Sugar. Sugar can change the activity of the bacteria in the bread, so a sweet loaf might be a bit fluffier than a savory. The same amount of flour is used in every loaf.
Q: Can you do Vegan loaves?
A: Yes, of course. We have found using nutritional yeast as the cheese component gives it a similar cheesy flavor. Just message us with your requests!
